Tofu is a great fat-free protein, as well as an excellent source of amino acids, iron, calcium and other micro-nutrients. It’s made in a similar process to cheese – by curdling fresh soya milk, pressing it into a solid block and cooling it.
Depending on how you cook it, tofu can be used to create a range of textures, from smooth and soft to crispy and crunchy. Fry it or bake it to get a crispy effect. Scramble it or beat it to get a smooth, creamy result.
