Understanding noodles

Use the right noodle for the right purpose and you get one of the world’s ultimate fast foods. Once you start cooking you will find you are automatically making the right choices – fine noodles for a quick laksa, sturdy chow mien noodles for a stir-fry, and so on.

Understanding tofu

Tofu is a great fat-free protein, as well as an excellent source of amino acids, iron, calcium and other micro-nutrients. It’s made in a similar process to cheese – by curdling fresh soya milk, pressing it into a solid block and cooling it.

Depending on how you cook it, tofu can be used to create a range of textures, from smooth and soft to crispy and crunchy. Fry it or bake it to get a crispy effect. Scramble it or beat it to get a smooth, creamy result.

Quick steps for preparing noodles

1. Bring water to the boil.
2. Add noodles, separate with fork, cook for one minute.
3. Drain, toss in a little oil, set aside.
4. Cook your usual stir-fry recipe then add noodles and stir-fry for 1 minute.
